Cheesy Beef and Potatoes (6 Servings)
- 1 package ground beef
- 1 cup onion chopped
- 1 cup shredded Cheddar cheese
- 4-5 medium potatoes, peeled and thinly sliced
- 1 (10.75 oz) can cream of mushroom soup
- 1 cup water
Preheat oven to 375 degrees. In a medium skillet cook ground beef and chopped onion until ground beef is browned and onion is tender. Drain off excess fat. Place mixture in a greased 9x13” baking dish. Sprinkle with Cheddar cheese over the top of the beef mixture and place the sliced potatoes over the cheese. In a medium saucepan over medium heat, warm cream of mushroom soup and water until heated through. Pour the soup over the sliced potatoes. Bake the casserole for 30-45 minutes or until potatoes are tender and golden.
