Apple Glazed Meatloaf (10 Servings)
- 1 lb ground beef
- 1 medium onion minced
- 2 cups soft bread crumbs
- 2 cups applesauce, divided
- 1 egg beaten
- 1/8 tsp pepper
- 1 lb ground pork
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 2 tbsp brown sugar
Preheat oven to 350 degrees. In a microwave safe bowl, cook minced onion for 2-3 minutes or until tender. In a large bowl, combine onion, bread crumbs, 1 cup applesauce, egg and pepper. Stir in beef and pork and gently mix. Shape mixture into loaf and place in a 2 quart baking dish. In a medium saucepan over medium heat, combine remaining 1 cup applesauce, apple cider vinegar, Dijon mustard and brown sugar. Cook until heated through. Bake the meatloaf in the oven for one hour and 30 minutes or until internal temperature of meatloaf reaches 160 degrees. Baste the meatloaf with the glaze every 20 minutes. Let meatloaf cool for 15 minutes before slicing and serving.
