Moroccan Beef and Beans (4-6 Servings)

Bring a large pot of lightly salted water to a boil. Add couscous and stir. Bring to a boil again, lower heat and cover. Simmer until all the water has been absorbed. Stir to fluff, remove from heat and allow to stand 5 minutes; set aside. In a medium skillet over medium heat, cook ground beef, salt and pepper until beef is browned. Drain off excess fat. Add minced garlic and let cook one minute more. Add tomatoes and liquid, green beans and carrots; bring to a boil. Reduce heat and simmer for 15 minutes. Stir in mint. Divide meat mixture between four or six shallow serving bowls and serve with couscous.
