Meatball Baguette Sandwiches (4 Servings)
For more servings use 2 baguettes.
- 1 lb ground beef
- 3/4 cup bread crumbs
- 2 tsp dried Italian seasoning
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 2 tbsp grated parmesean cheese
- 1 egg, beaten
- 1 French baguette
- 1 tbsp extra virgin olive oil
- 1/2 tsp garlic minced
- Pinch of sea salt
- 1 (14 oz) jar spaghetti sauce
- 4 slices provolone cheese
Preheat the oven to 325 degrees. In a bowl, mix together ground beef, bread crumbs, Italian seasoning, minced garlic, chopped fresh parsley, Parmesan cheese and egg. Shape the mixture into meatballs about 1” in diameter and place in a 9x13” baking dish. Bake in the oven for 10-15 minutes or until cooked through. Cut the French baguette in half lengthwise and slightly hollow out the inside to make a well for the meatballs. Brush both cut sides of the baguette with olive oil and season with garlic powder and salt. Toast both halves of the baguette in the preheated oven next to the meatballs for 5 minutes or until slightly crisp and golden. In a medium saucepan over medium heat, warm the spaghetti sauce. Spoon the meatballs and sauce onto the baguette and top with slices of provolone cheese. Return the baguette to the oven and bake for 2-3 minutes or until cheese has melted. To serve, cut the baguette into required portions.
