Meatball Pitas (8 Servings)
- 1 package ground beef
- 1/2 cup plain yogurt
- 1 tsp lemon juice
- 1 tsp minced garlic, divided
- 1/4 tsp sea salt
- 1 tbsp chopped fresh oregano
- 3/4 tsp ground red pepper (or cayenne)
- 2 tsp olive oil
- 2 tbsp water
- 4 pita bread rounds, cut in half
- 8 lettuce leaves
- Tomato wedges, optional
In a small bowl combine plain yogurt, lemon juice, 1/2 tsp minced garlic and sea salt; set aside. In a medium bowl, combine the ground beef, chopped oregano, sea salt, remaining 1/2 tsp minced garlic and ground red pepper. Form meatballs about 1/2” in diameter. In a large skillet over medium heat, heat the olive oil. Add the meatballs and cook 3-5 minutes or until browned on all sides. Drain off excess fat. Add water and cook 2-3 minutes more or until meatballs are cooked through. To serve, place 3 meatballs in each pita half and top with 1 tbsp of the yogurt sauce, I lettuce leaf and tomato wedges.
